Prediction of bitter pit in apples through Mg2+ infiltration and ethephon application on fruits
Estudou-se o efeito da infiltração de magnésio e cálcio no desenvolvimento de sintomas de bitter pit de maçãs 'Gala'. Examinou-se, também, a eficiência da infiltração de magnésio e da aceleração da maturação de maçãs 'Royal Gala' como métodos de previsão da ocorrência de bitter pit após o armazenamento. No primeiro experimento, maçãs 'Gala' foram infiltradas com MgCl2; CaCl2 ou MgCl2 mais CaCl2. No segundo experimento, maçãs 'Royal Gala' foram infiltradas com MgCl2; ou imersas em solução contendo ethephon por cinco minutos. Como controle, frutos de cada cultivar foram armazenados em atmosfera controlada por seis meses mais 18 dias a 20°C. Frutos infiltrados com MgCl2 apresentaram significativo acréscimo na incidência e severidade de bitter pit, proporcional à concentração de MgCl2 na solução. Frutos infiltrados com CaCl2 não apresentaram sintomas de bitter pit. A aceleração da maturação de maçãs 'Royal Gala' na colheita foi efetiva na previsão de bitter pit após o armazenamento.The effect of magnesium and calcium infiltration on bitter pit symptoms development in Gala apples was studied. It was also examined the efficiency of magnesium infiltration and the ripening hastening of Royal Gala apples as a predictive methods of bitter pit occurrence after storage. In the first experiment, Gala apples were infiltrated with MgCl2; CaCl2; or MgCl2 plus CaCl2. In the second experiment Royal Gala apples were infiltrated with MgCl2; or immersed into solution containing ethephon during five minutes. As a control a sample of each cultivar was stored in controlled atmosphere during 6 months plus eighteen days at 20°C. Fruits infiltrated with MgCl2 showed increased incidence and severity of bitter pit proportional to the MgCl2 concentration in the solution. Infiltration with CaCl2 prevents bitter pit-like symptoms. The ripening hastening of Royal Gala apples at harvest was effective on the bitter pit prediction after storage
Water influx through the wetted surface of a sweet cherry fruit: Evidence for an associated solute efflux
Sweet cherries are susceptible to rain-cracking. The fruit skin is permeable to water, but also to solutes. The objectives of this study were to (1) establish whether a solute efflux occurs when a sweet cherry fruit is incubated in water; (2) identify the solutes involved; (3) identify the mechanism(s) of efflux; and (4) quantify any changes in solute efflux occurring during development and storage. Solute efflux was gravimetrically measured in wetted fruit as the increasing dry mass of the bathing solution, and anthocyanin efflux was measured spectrophotometrically. Solute and anthocyanin effluxes from a wetted fruit and water influx increased with time. All fluxes were higher for the cracked than for the non-cracked fruit. The effluxes of osmolytes and anthocyanins were positively correlated. Solute efflux depended on the stage of development and on the cultivar. In ‘Regina’, the solute efflux was lowest during stage II (25 days after full bloom (DAFB)), highest for mid-stage III (55 DAFB), and slightly lower at maturity (77 DAFB). In contrast with ‘Regina’, solute efflux in ‘Burlat’ increased continuously towards maturity, being 4.8-fold higher than in ‘Regina’. Results showed that solute efflux occurred from wetted fruit. The gravimetrically determined water uptake represents a net mass change—the result of an influx minus a solute efflux
Measurement of Water Vapor Condensation on Apple Surfaces during Controlled Atmosphere Storage
Apples are stored at temperatures close to 0 °C and high relative humidity (up to 95%) under controlled atmosphere conditions. Under these conditions, the cyclic operation of the refrigeration machine and the associated temperature fluctuations can lead to localized undershoots of the dew point on fruit surfaces. The primary question for the present study was to prove that such condensation processes can be measured under practical conditions during apple storage. Using the example of a measuring point in the upper apple layer of a large bin in the supply air area, this evidence was provided. Using two independent measuring methods, a wetness sensor attached to the apple surface and determination of climatic conditions near the fruit, the phases of condensation, namely active condensation and evaporation, were measured over three weeks as a function of the operating time of the cooling system components (refrigeration machine, fans, defrosting regime). The system for measurement and continuous data acquisition in the case of an airtight CA-storage room is presented and the influence of the operation of the cooling system components in relation to condensation phenomena was evaluated. Depending on the set point specifications for ventilation and defrost control, condensed water was present on the apple surface between 33.4% and 100% of the duration of the varying cooling/re-warming cycles
Methods for bitter pit prediction in Fuji and Braeburn apples
Experimentos foram conduzidos com objetivo de avaliar a eficiência de métodos para predição da ocorrência de bitter pit em maçãs 'Fuji' e 'Braeburn' em duas épocas de amostragem. Os frutos, provenientes de seis pomares distintos, três para cada cultivar, foram coletados antecipadamente (20 dias em relação à colheita) e na data prevista para a colheita comercial. Os métodos de predição utilizados foram: a) infiltração dos frutos com solução 0,10M MgCl2 mais 0,01% Tween-20 e 0,4M de sorbitol; b) imersão dos frutos em solução com 2500nL L-1 de ethephon mais 0,01% Tween-20. Os frutos foram armazenados em atmosfera controlada (AC) por cinco meses mais 12 dias, a 20°C, simulando a incidência real de bitter pit em armazenamento comercial. Cada tratamento foi constituído por quatro repetições de 25 frutos. A incidência e severidade de bitter pit, prevista por ambos os métodos foi semelhante à ocorrência real de bitter pit após o armazenamento em atmosfera controlada para cada uma das cultivares utilizadas, quando os frutos foram amostrados antecipadamente em relação à colheita comercial. Na avaliação realizada com frutos amostrados na colheita comercial, nenhum dos métodos foi capaz de prever a incidência de bitter pit após o armazenamento de maneira confiável. Para ambas as cultivares, a infiltração com magnésio e a imersão dos frutos em ethephon só são eficientes na predição da incidência de bitter pit em frutos coletados 20 dias antes da colheita comercial.Experiments were carried out with objective to evaluate the efficiency of methods for bitter pit prediction in 'Fuji' and 'Braeburn' apples sampled at two harvest dates. Fruits from 6 orchards, three for each cultivar, were sampled earlier (20 days before harvest) and at commercial harvest date. The prediction methods assessed were: infiltration of apples with 0.10M MgCl2 solution containing 0.01% Tween-20 and 0.4M sorbitol; and immersion of fruits in 2.500nL L-1 ethephon solution plus 0.01% Tween-20. Four replications of 25 fruits of each orchard were stored on controlled atmosphere (CA) during five months plus 12 days at 20°C in order to assess the real bitter pit occurrence. Both methods showed incidence and severity similar to real bitter pit occurrence after storage for both cultivars sampled 20 days before harvest. On the other hand, none method was able to predict the incidence of bitter pit after CA storage for fruits sampled at commercial harvest. The magnesium infiltration and immersion of fruits on ethephon only are efficient to predict bitter pit incidence on fruits when sampled 20 days before commercial harvest

Assessment of stress induced by high CO2 concentrations on apples by the chlorophyll fluorescence technique
[PORT] O trabalho teve como objetivo avaliar o método da fluorescência de clorofilas para
detectar o estresse induzido em maçã, cultivar ‘Braeburn’, através de altas concentrações de
CO2. As medições da fluorescência de cloroficas foram feitas com auxílio de um fluorímetro
do tipo PAM (Pulse Amplitude Modulation, Alemanha). Previamente às análises, as maçãs
permaneceram três horas num ambiente escuro para adaptação dos fotossistemas. Logo em
seguida, foram realizadas as medições iniciais de emissão de fluorescência das clorofilas. Os
frutos foram armazenados nas seguintes concentrações de CO2 por 24 horas: 0; 5; 10; 15; 20;
25 e 30kPa de CO2. Após este período foi medido novamente a fluorescência de clorofilas.
Todas as análises foram realizadas à temperatura de 20ºC. As avaliações foram realizadas em
três épocas: na colheita dos frutos, uma e duas semanas após a colheita. Com relação aos
resultados obtidos foi possível verificar que, quanto maior a concentração de CO2, menor o
valor (Fv:Fm) que representa o rendimento potencial quântico, considerado como indicador
de estresse na maçã. Foi possível observar também que, o estresse provocado pelo CO2 nos
frutos é reversível, pois os frutos permanecendo em atmosfera normal e então realizada nova
medição da fluorescência de clorofilas, antes de uma nova aplicação de CO2, os valores
(Fv:Fm) foram similares para todas as condições. No entanto, os valores obtidos nas
avaliações subseqüentes foram menores que os anteriores, provavelmente, pela degradação
das clorofilas. À medida que o fruto foi amadurecendo, o grau de estresse foi maior, ou seja, a
diferença entre os valores (Fv:Fm) foram maiores nas avaliações após uma e duas semanas,
em relação à época da colheita. Com estes resultados, pode-se buscar no futuro uma forma
para previsão de certos distúrbios fisiológicos que, normalmente, ocorrem durante o
armazenamento de maçãs em atmosfera controlada causados pelo uso de CO2 neste sistema de
armazenamento.
[ENG] The aim of this work was to evaluate the chlorophyll fluorescence emission as a tool
to detect the stress induced in ‘Braeburn’ apples after fruits have been exposed to high CO2
partial pressures. Chlorophyll fluorescence measurements were performed with a PAM (Pulse
Amplitude Modulation, Germany) fluorometer. Previously to measurements, fruits were kept
in the darkness for three hours in order to adapt the photosystems. Apples were then stored for
24 h under the following CO2 partial pressures for stress induction: 0; 5; 10; 15; 20; 25 and 30
kPa CO2. Afterthat, chlorophyll fluorescence emission was analyzed again. All fluorescence
measurements were performed at 20°C. The evaluations were done at harvest, one week and
two weeks later. The results show that, the higher the CO2 partial pressures, the smaller the
Fv:Fm quantum yield value, that is considered as a stress indicator in apples. The CO2
induced stress appears to be reversible, then when apples exposed to higher CO2
concentrations returned to a normal atmosphere they showed similar Fv:Fm values. However,
the values assessed at each subsequent evaluation were lower than the previously observed,
probably due to chlorophyll degradation. Fv:Fm values increased with fruit ripening, as
shown by the evaluations carried out at one and two weeks after harvest, when the stress was
greater and the Fv:Fm values were higher. Our results showed that chlorophyll fluorescence is
a potential tool to predict some CO2 related physiological disorders which occur during

Relationship among quality parameters and maturity indices at harvest with “bitter pit” incidence on ‘gala’ and ‘royal gala’ apples after storage
[PORT] O trabalho teve como objetivo correlacionar parâmetros de qualidade e índices de
maturação de maçãs ‘Gala’ e ‘Royal Gala’ na colheita com a incidência real de “bitter pit”
com a finalidade de obter coeficientes que possam ser utilizados para predição de “bitter pit”
após o armazenamento em atmosfera controlada (AC). Para isso, amostras de 130 frutos da
cultivar Gala, provenientes de 3 pomares comerciais foram coletadas antecipadamente, 20
dias antes, ou na colheita comercial, com exceção da cultivar Royal Gala que somente foi
amostrada em dois pomares na colheita comercial. No dia posterior a cada colheita 30 frutos
de cada pomar foram analisados individualmente para os seguintes parâmetros: peso,
diâmetro equatorial, densidade, firmeza de polpa, sólidos solúveis, acidez titulável, índice de
iodo-amido, suculência, respiração e etileno. Uma amostra paralela à utilizada nos demais
parâmetro avaliados, composta de 4 repetições de 25 frutos de cada pomar, foi armazenada
em 1,5kPa O2 + 3,0kPa CO2 com umidade relativa de 95% na temperatura de +0,5°C, por 5
meses. A incidência de “bitter pit” obtida após o armazenamento em AC mais 7 dias à
temperatura de 20°C foi correlacionada aos parâmetros anteriormente citados. O índice de
iodo amido foi o único índice de maturação que apresentou correlação significativa com a
incidência de “bitter pit” para a cultivar Gala, quando colhida antecipadamente em relação à
colheita comercial e para a ‘Royal Gala’ quando amostrada na colheita comercial.
[ENG] The objective of this work was to verify if there is a relationship among quality
parameters and maturity indices of Gala and Royal Gala apples with the incidence of bitter pit
in order to obtain correlations coefficients that could be used to predict bitter pit occurrence
after controlled atmosphere storage (CA). For this, samples Gala apples from 3 commercial
orchards were taken 20 days before and at commercial harvest, Royal Gala apples were
sampled only from two orchards at commercial harvest. One day after harvest fruit were
individually analyzed for the following parameters: fruit weight, equatorial diameter, density,
firmness, solid soluble content, titratable acidity, starch iodine index, juiciness, respiration
and ethylene. Storage samples from each orchard were stored for 5 months at 1.5kPa O2 +
3.0kPa CO2 at 0.5°C and relative humidity of 95%. The bitter pit incidence was recorded after
CA storage plus 7 days at 20°C and correlated with the parameters previously analysed. The
starch iodine index was the only parameter to show a significant correlation with the bitter pit
incidence on Gala apples harvested 20 days before and at commercial harvest for Royal Gala

Dynamic controlled atmosphere: A review of methods for monitoring fruit responses to low oxygen
The storage of fruit at minimum oxygen condition is crucial for optimal fruit quality maintenance. However, the optimal oxygen partial pressure of fruit varies according to several factors such as species, cultivar, harvest maturity, temperature, growing season and storage period. Based on these factors, storage technologies were developed that allow for the detection of the lower oxygen limit (LOL) and the storage of fruit under the lowest optimal oxygen partial pressure. One emerging technology is known as dynamic controlled atmosphere (DCA). Commercially, there are four DCA systems used: [1] DCA based on ethanol production and accumulation (DCA-Eth); [2] DCA based on chlorophyll fluorescence (DCA-CF); DCA based on the respiratory quotient (DCA-RQ) and [4] DCA based solely on CO2 production (DCA-CD). This reviews the recent developments of these DCA systems and their effect on fruit quality. Generally, the storage of fruit under DCA has a positive effect on the overall fruit quality, with regards to reduced physiological disorders and higher flesh firmness maintenance, when compared to controlled atmosphere (CA). Evidence also shows that storing fruit under DCA-RQ and DCA-CD allowed higher volatile compound emission and concentration, which can contribute positively to fruit flavor. The DCA systems are “green storage technologies” because the system enables the increase of storage temperature and thereby saving electrical energy. Storage of apples under DCA maintains an overall fruit quality similar to CA combined with the ripening inhibitor 1-Methylcyclopropen (1-MCP), which is an interesting option for organic fruit storage. Dynamic controlled atmosphere is a recently developed storage technique and is in constant improvement. The latest developed DCA techniques (DCA-RQ and DCA-CD), in contrast to DCA-CF, allow the use of extremely low oxygen levels. In the future, new and multi-sensor DCA systems are under development, which might not just control O2 partial pressure but also temperature and other parameters to allow for more energy efficient but high quality fruit storage systems
Ripening and development of chilling injury in ‘monte carlo’ tomatoes treated with 1-methylcyclopropene
[PORT] O armazenamento de tomates do tipo não longa-vida sob baixas temperaturas tem sido
utilizado para incrementar sua vida pós-colheita. No entanto, sob essas condições, ao invés de
manter a qualidade, os frutos podem desenvolver sintomas de injúrias causadas pelas baixas
temperaturas. Portanto, o objetivo deste trabalho foi avaliar o efeito da inibição da ação do
etileno sobre o amadurecimento e o desenvolvimento de injúria pelo frio em tomates ‘Monte
Carlo’ armazenados a 10°C e 5°C. O experimento foi conduzindo em esquema bifatorial
(3x2), com diferentes temperaturas de armazenamento (20°C, 10°C e 5°C) e a aplicação ou
não de 1μl l-1 de 1-metilciclopropeno (1-MCP), um composto que bloqueia a ação do etileno.
Depois de 14 dias de armazenamento, a síntese de etileno e a respiração pós-armazenamento
foi maior nos frutos armazenados a 5°C, sendo estimulada pela aplicação de 1-MCP. Nos
demais frutos, a aplicação desse composto reduziu tanto a produção de etileno, quanto à
respiração. A ocorrência de dano por frio foi estimulada pelo armazenamento a 5°C e
levemente intensificada pela inibição da ação do etileno. O tratamento dos frutos a 10°C com
1-MCP prejudicou o desenvolvimento da coloração vermelha, demonstrando que essa
temperatura reduz a capacidade dos frutos em superar a inibição promovida pelo 1-MCP. O
tratamento com 1-MCP manteve a firmeza da polpa e a acidez titulável dos frutos mantidos a
20°C e 10°C mais elevada, não apresentando efeito sobre essas características a 5°C. Concluise
que a qualidade de tomates não longa-vida pode ser mantida por até 14 dias com o
armazenamento a 10°C ou com a aplicação de 1-MCP a 20°C. A aplicação desse composto
combinado com o armazenamento a 10°C pode prejudicar o amadurecimento pósarmazenamento
dos frutos, enquanto que a 5°C estimula levemente o desenvolvimento de
sintomas de injúria pelo frio.
[ENG] The cold storage has been a commom practice for extending the postharvest life of
non-long-life tomatoes. However, instead of maintaining quality, low temperatures may lead
tomato fruits to develop chilling injury symptoms. Thus, this work aimed to evaluate the
effect of inhibiting the ethylene action on the ripening and development of chilling injury in
‘Monte Carlo’ tomato fruits stored at 10°C and 5°C. The experiment was a bifatorial (3x2),
with different storage temperature (20°C, 10°C and 5°C) and the treatment or not of 1,0 μl l-1
of 1-methylcyclopropene (1-MCP), a compound that irreversible blocks the ethylene action.
After 14 days of storage, 5°C-stored fruits showed higher ethylene synthesis and respiration.
Whereas 1-MCP enhanced this effect at 5°C, it reduced the ethylene production and
respiration at 20°C and 10°C. Chilling injury was sharply increased at 5°C and slightly
stimulated by inhibiting ethylene action. 1-MCP-treated fruits stored at 10°C showed lower
post-storage red color development, suggesting that at this temperature the ability of the fruits
in overcomming the inihibition caused by 1-MCP is decreased. 1-MCP reduced flesh firmness
and acidity loss in fruits stored at 20°C and 10°C but not at 5°C. Thus, we conclude that the
quality of non-long-life tomato fruits can be maintained during 14 days either by storing at
10°C or by applying 1-MCP at 20°C. Whereas the application of 1-MCP associated with the
storage at 10°C may damage the ripening of the fruits, at 5°C it increase slightly the
development of chilling injury symptoms
